Our story begins with a mission to share delicious, authentic, handcrafted kimchi using the finest natural ingredients in Minnesota.

Mimi Kimchi makes better kimchi because we love what we do! Better because of our process and choice of ingredients. We take the time to deliberately approach the entire process from purchasing the ingredients to making, tasting and packaging the kimchi. We make small batches to maintain our consistent quality to deliver only the finest to our customers.

WHAT IS KIMCHI?

Kimchi is a traditional Korean staple food whose components include some combination of vegetables, garlic, ginger, chili peppers, salt, sugar, and fish sauce.

Kimchi’s flavor is complex and varies widely depending on the recipe. The most prominent flavor you’ll find in kimchi is typically sour because kimchi is a fermented dish. Lactic acid produced by bacteria during fermentation creates a tangy, pungent flavor similar to that of sauerkraut. Kimchi can also be spicy, depending on how much pepper is used and what kind, and may have ingredients such as fish sauce, or anchovies. The flavor will also vary depending on the vegetables you choose, the length of fermentation, and the amount of salt, sugar or fish sauce used. Kimchi can be made without fish which will have a lighter, fresher taste. Kimchi will keep well in the fridge for several months. It will still be safe to eat after that point, but the flavor will intensify and become more pungent, and the veggies may lose some of their crispness.

Kimchi is also rich in vitamin K, which helps your blood clot and keeps your bones from becoming brittle and high levels of fiber in kimchi aid in reducing cholesterol, but its biggest benefit may be in its "healthy bacteria" called lactobacilli. Lactobacilli is found in fermented foods like kimchi and yogurt. This good bacteria aids in digestion and keeps a healthy balance of bacteria in the gut. Common kimchi ingredients include garlic, ginger, and peppers, which are also great immune builders.
